PINEAPPLE BREAD PUDDING |

8 thick slices, day-old bread -
cut into one-inch cubes Preheat the oven to
350 degrees. Grease a 1½ quart baking dish (or six, one-cup baking
dishes). Toss together the bread cubes and pineapple, and place the
mixture in the prepared baking dish(es). In a mixing bowl, blend
together the melted butter, the sugar and the eggs and pour the custard
over the bread mixture. Bake until puffed and golden - about 40 minutes
for full size, about 25 minutes for individual size. Check to be
sure the center is "set" before removing from the oven. Sprinkle top
lightly with a small amount of additional brown sugar. Serve
immediately.
